Among Ehime's many culinary delights, Tai-meshi (Sea Bream Rice) is one of the most popular local specialties. It actually comes in different regional styles: the "Nanyo style" uses fresh sashimi, while the "Chuyo style" involves cooking the rice with flaked fish. Now, a new movement is emerging in the Toyo area—the "Third Style" known as Western-style Grilled Tai-meshi. To qualify as Toyo-style Tai-meshi, the dish must use sea bream fillets and rice prepared in a Western culinary style. Ambitious local Western-style restaurants are leading the way with their own unique versions. Your cycling journey begins with a rental bike from B-Shop OCHI, a specialist sports bike shop. The flowing artesian springs found all over Saijo City are called “Uchinuki.” These springs are fed by the Kamo River, which originates in the Ishizuchi Mountain Range. The water is safe for drinking, and it’s common to see locals filling up their own bottles. The water is soft and refreshing, making it perfect for hydration during a ride. Besides the Saijo City Comprehensive Cultural Hall (0.8 km point) and Uchinuki Square (2.0 km point) featured here, there are many other Uchinuki springs throughout the city, making it fun to explore them all by bike.

This Uchinuki spring park is located in a spacious rural area. You can see how this water has nurtured the crops in the surrounding fields. Being close to the foot of the mountains, it is a soothing spot where local cyclists often stop for water during the summer. The water flow is abundant, and locals are often seen here collecting water for drinking or cooking.

After passing through the straight roads of the countryside and reaching the Nakayama River, head north along the riverbank. You’ll be captivated by the scenery that becomes more magnificent as you approach the river mouth. On your right, a beautiful village appears where human life and water coexist harmoniously. This is the Teizui District, known as the “Venice of Saijo” for its unique scenery. Why not take a break while admiring the picturesque streets that served as the setting for the movie “Koimachi Monogatari” (Love Town Story)?

“Western-style Grilled Tai-meshi” (sea bream rice) is a new local specialty from the Toyo region. Among the 10 restaurants offering this style in 2025, “Arles” in Saijo City has created two unique dishes based on its signature recipes. The “Tai-ichiro-kun Omurice” (omelet rice) features butter rice cooked with 100% sea bream stock, topped with a sea bream dashi glaze and homemade tomato sauce. Another popular dish is “Tai-ichiro-kun Doria” (a Japanese-style baked rice gratin) which adapts the restaurant’s famous doria into a Tai-meshi style. These creative dishes were born from the owner’s passion for food exploration and constant innovation. Come and taste this new evolution of Tai-meshi.
